Ideas for leftover Christmas pudding

In the unlikely event that you have leftover Christmas pudding, we’ve got a few ideas up our sleeves for what you can do with it – perfect for the following days when you’ve not overeaten at dinner.

We attend events in Scotland and they tell us they have Christmas pudding for breakfast! We actually haven’t tried that but they do say it’s very good. I personally would do a bread and butter pudding with the leftovers. Substitute your Christmas pudding for ordinary bread, butter the slices and follow your usual recipe for bread and butter pudding. Some people use marmalade too, and I’ve added dried apricots before which make a nice addition.

 

Another tasty, and easy, way to use your Christmas pudding is to make chocolate truffles with the leftovers. Quite simply, all you need to do is melt two parts of good quality (at least 70% cocoa) chocolate to one part double cream in a bowl over a pan of simmering water. When melted, take it off the heat and crumble in your Christmas pudding. At this point you can also add a splash of brandy or whisky if you like. Combine everything then allow it to stand for a few hours. Scoop a heaped teaspoon of the truffle mix and roll in the palm of your hands to make a ball. Roll in cocoa powder and dust off the excess.

 

Of course, you could also crumble some pudding into brownie mixture before baking, if you wanted another chocolate-based recipe.

 

Another quick way to make your leftovers sing is to whip up a quick and scrumptious hot sauce for ice cream. Combine your leftover pudding with butter and brown sugar (depending on how much you have left, around 175g of pudding would need a flat tablespoon of butter and sugar) in a pan over a low heat. Stir in a dash of brandy and a squeeze of orange juice and bring it all to boil. Turn it down to a simmer for a minute then serve over vanilla ice cream.
